  • 2 pounds beef chuck, cut into 1-inch pieces
  • Salt and pepper

  • 1 can (14.9 oz) Guinness Stout
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon sugar
  • 1 tablespoon dried thyme
  • 4 large carrots, sliced
  • 1 pound baby potatoes, halved
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season the beef with salt and pepper. In a large pot, heat the oil over medium-high heat. Add the beef in batches and cook until browned on all sides. Remove the beef and set aside.
  2. In the same pot, add the onions and garlic, cooking until softened. Stir in the flour and cook for 1-2 minutes.
